Thick Bread & Pheasant Broth

Method

Clean and prepare the bird • Boil the bird whole with a little salt • Remove the bird from the water and remove its skin and bones • Shred the meat • Keep the cooking stock • Stacck some slices of country-style bread (Rolão) • Arrange the slices of bread in the base of a soup tureen • Drizzle with extra virgin olive oil and sprinkle with chopped coriander • Add the warm bird stock • Place the shredded pheasant meat on top
