Apple Puree and Goat’s Cheese Parcel
Ingredients
Egg • Flour • Apples • Goat’s cheese • Honey • Walnuts • Almonds • Mint
Method
Pastry: Whisk the egg and add a little flour • Add water • Cover the bottom of warm sauté pan and leave the liquid to solidify • Turn gently from one side to the other • Keep for later Apple puree: Cook the apples in water and make a puree Filling: Add the apple puree to some shavings of dry goat’s cheese • Heat a little honey in a sauté pan until caramelised • Mix the apple puree and goat’s cheese • Take off the heat • Add the walnuts and the almonds previously toasted in the oven heated to 205ºC Plating up: Place the parcel with the filling at the corner of a plate • Garnish with mint leaves
