Ingredients
• 800g braising steak
• 1 medium onion
• 1 tsp powdered garlic
• 1 tsp Herbes de Provence
• 1 tsp cumin
• 1 tbsp black pepper corns
• 100ml extra virgin olive oil
• 200g grated ‘Queijo da Ilha’ cheese
• 1 can butter beans
• 1 tsp black pork lard
• 1 pack wheat tortillas for burritos
• 1 jar Mexican salsa
Method
Place the chopped onion, olive oil, powdered garlic, Herbes de Provence, cumin, black pepper and meat cut into large chunks into a pan • Braise for a little and add enough boiling water to cover all the meat • Cook for 40 minutes • Shred the meat, remove any fat and reserve • Reduce the butter beans and puree, adding the lard • Place a tortilla on a plate, fill and roll with shredded meat, Mexican salsa and cheese • Place two tbsp of bean puree next to the tortilla • Place in the oven for the cheese to melt and brown.Serve with rice, jalapenos and guacamole
