Tomato and Prosciutto Skewers

Ingredients

8 small wooden skewers soaked in water for 20 min. • 250g cherry tomatoes • 8 slices prosciutto ham, each cut into 3 strips • 50ml olive oil • A handful of chopped, mixed herbs. • 100g button mushrooms • Small bunch of thyme broken into sprigs • 2 red onions, cut into wedges

Method

Wrap each tomato and thyme sprig in a strip of prosciutto • Thread the wrapped tomatoes, mushrooms and onions alternately onto the skewers • Drizzle with a little oil and grill or barbecue for 8-10 min. until light golden • Serve with a mixture of the mixed herbs and olive oil
