Vegetable Gratin

Ingredients

500ml Organic soya cooking cream • 450g vegetables, such as: Belgian chicory, small carrots and leeks • 2 cloves of chopped garlic • 2 eggs • Pepper, salt • Handful of chopped parsley

Method

Preheat the oven to 200ºC • Cook the chicory and carrots in boiling water, add the leeks after about 4 minutes • Remove from the water and place in an oven dish • Mix the soya cream, garlic, eggs, pepper and salt in a bowl • Pour over the vegetables and place in the oven for about 25 minutes until golden brown • Remove from the oven and sprinkle with parsley
