Roast Garlic and Thyme New Potatoes
Ingredients
250g new baby potatoes, unpeeled • 50ml Cortes de Cima Extra Virgin Olive Oil • 10g salt • 5g freshly ground pepper • 1 sprig of fresh thyme
Method
Drizzle some olive oil in a frying pan and add the crushed garlic • Sauté the washed and dried new potatoes • Season with salt and black pepper, cover and place in the oven preheated to 120ºC for 20 minutes • The lower temperature ensures the potatoes retain more water and do not lose their texture • Drizzle with a little more olive oil and sprinkle with fresh thyme leaves
