“Summer Coconut Vegetables”

Ingredients
1 can Koala Coconut milk • Grissini “Panealba” sesame • Ramazotti cashew nuts with piri piri • 100g fresh green beans • Fresh Broccoli • Mini aubergines • Mini Courgettes • Fresh Basil • 1 plum tomato •Fresh bean sprouts • Fresh lemon
Method
Chop the vegetables into smaller pieces • Heat the vegetables – apart from the sprouts- in a medium hot non-stick pan for at least 3 minutes • Add the cashew nuts, lemon juice, fresh basil leaves and sprouts • Pour over the coconut milk and cook for a maximum of 2 minutes • Season with flor de sal and serve immediately with the sesame grissini
