Cold Basmati Rice Balls

Ingredients
400g basmati Uncle Ben’s® rice • 500ml water • Salt • 1 red pepper finely chopped • 50g fresh coriander, finely chopped • 50g fresh mint finely chopped • 100g Greek feta cheese small cubes • Pepper and salt • 50g pitted black olives, finely chopped • Lettuce with olive oil
Method
Cook the rice for about eight minutes, drain and place in the fridge to cool • Chop the remaining ingredients • Mix with the chilled rice, and then form into ball shapes • Wash the lettuce, and drizzle with oil. Arrange on a plate and add the rice balls
