Spicy Nachos

Ingredients
2 Old El Paso corn tortilla packs • 1 jar Old El Paso sliced jalapenos • 1 red pepper • 1 spring onion • 250g grated cheese (Manchego, Cheddar) • 1 ripe tomato • 1 tbsp olive oil • Doritos Sour Cream and Old El Paso Guacamole to accompany
Method
Preheat the oven to 180ºC • Quickly sauté the peppers in olive oil, to keep them firm • Cut the spring onion into fine slices and finely cube the tomato (skin and seed removed) • Place a layer of corn tortillas on a plate to go into the oven and sprinkle with the peppers, the spring onion and the jalapenos, covering with the cheese • Repeat alternately for one or two layers, depending on how much you have • For this amount for 4 people, and 4 plates you need no more than 2 layers • Place in the oven for 10 minutes until the cheese has fully melted and is turning golden • Serve with the sour cream and guacamole
