Pomegranate with Mascarpone Cream

Ingredients
4 pomegranates (approx 1 kg) • 250g mascarpone • 4 egg yolks • 125g sugar • 500ml whipping cream • 1 tsp lemon juice • 20ml vodka • 50g sugar • Balsamic glaze, classic or flavoured
Method
Remove the seeds from the pomegranates • Sprinkle over 50g of sugar and the vodka and stir well • Whip the cream with a metal whisk until stiff and store in the fridge • Mix the remaining sugar and the egg yolks and beat until white, before heating in bain-marie, stirring continually • Add the mascarpone, mixing with the previous mixture after cooling a little • Add the cream and stir together, returning to the fridge • Serve in tall glasses in alternating layers of cream and pomegranate seeds • Decorate with the balsamic glaze
