Almond sweet of Stoechas lavender and fresh goat’s cheese
Ingredients
1 fresh goat’s cheese • 1 glass of milk • 1 egg • Flour to taste • 2 tbsp stoechas lavender honey • 100g almonds • 8 prunes • 1 orange • Redcurrants to taste • 1 sprig of rosemary
Method
Base: Chop the almonds • Heat in a pan with olive oil and honey • Keep for later •
Prunes: Cook the prunes with honey and a little water • Remove from the heat and blend into a puree • Keep for later
Fresh goat’s cheese: Break up the fresh cheese and add honey and orange zest • Keep for later
Orange juice with milk: Heat the milk and the orange juice • Add the egg and the flour until smooth • Leave to cool
Caramel: Heat the honey with water
Presentation:
Place the chopped almond in the base of a serving ring • Cover with a layer of prune puree • Add the prepared cheese and decorate with redcurrants and rosemary • Remove the ring • Pour over the caramel and drizzle the orange juice and milk around the plate
