Chestnut Crème Brûlée

Ingredients

700ml milk • 130g sugar • 5 egg yolks • 50g of Maizena • 150g cooked chestnuts • 2 cinnamon sticks • 1 lemon rind • 30g brown sugar

Method

Cook the chestnuts in a covered pan with a glass of water over a low heat, so that when they are cooked they still have a little liquid, needed for when you mash them • Put the milk on to boil with the lemon rind • Mix the egg yolks with the sugar, blending well until it turns white and then add the corn flour • Pour the boiling milk into this mixture, stirring well, before adding the pureed chestnuts • Return to the heat, stirring well, until it begins to boil and thicken slightly • Pour onto small plates, ideally not very high, and leave to cool • When cool, sprinkle with brown sugar and burn with a flame torch or use a traditional burning iron
