White Chocolate Parfait

Ingredients

750ml fresh cream • 4 tablespoons sugar • 1 egg • 4 egg yolks • 8 tablespoons icing sugar • 100g white chocolate • 8 tablespoons Mozart white chocolate cream liqueur • An extra 100ml fresh cream

Method

Beat 750ml cream with 4 tablespoons sugar until stiff and place in the fridge • Beat 1 egg, 4 egg yolks and 8 tablespoons icing sugar until stiff, for at least 15 min • Meanwhile melt the chocolate in 100ml cream and the Mozart cream liqueur, “au bain-marie” (in a bowl above boiling water) until the chocolate has dissolved • Stir gently • Mix the whipped cream, chocolate and the beaten eggs carefully together with a spatula • Put the mixture in a spring-form cake tin and freeze for at least 4 hours • To serve: cut into pieces and drizzle with some chocolate sauce, garnishing with a few berries
